1 (8 oz.) pkg, Neufchatel cheese (low-fat cream cheese)
3 Tbs. diced sun dried tomatoes, packed in oil
1 pound sliced low-fat ham (or turkey will do)
1 pkg 10 inch flour tortillas
2 Tbs plus one cup salsa
In food processor, put sun dried tomatoes and chop until almost a
paste. Add cheese and 2 Tbs salsa. Process until creamy. Warm
tortillas in your microwave until supple (approx 45 seconds). On each
tortilla, spread a thin layer of cream cheese mixture 3/4 of the way
up the tortilla. Lay down a piece of ham. Roll up into cigar shape
and place in a gallon size plastic Ziploc bag (or some such thing).
Do this with each tortilla, placing them all in the bag and then place
in refrigerator overnight. Cut into 1 inch rounds and serve with salsa.
