Restaurant Style Potato Skins

   4 large baking potatoes, well scrubbed
   2 Tbsp. butter, melted
   1 cup shredded Cojack cheese (or Cheddar)
   1 tomato, seeded and chopped
   1 bunch green onions, thinly sliced
   Sour cream

      Pierce potatoes and rub skins with oil. Bake at 375 degrees for 1 to 1-1/4 hours until tender. Let stand until cool enough to handle. Cut them lengthwise into halves and then cut crosswise. Gently scoop out baked pulp, leaving 1/4" sides. (Save pulp for another use). Place potato shells, skin side down, on broiler pan and brush with melted butter. Broil 5" from heat for 8 to 10 minutes until crisp and golden. Sprinkle cheese, tomato and green onions over potatoes and continue broiling about 30 seconds until cheese is melted. Serve hot with sour cream.
